Jim Noble named the shack for his great-aunt Beulah, born in Iredell County in 1906, whose fried-chicken recipe he learned decades earlier. The original sandwich follows that family connection with a simple assembly: chicken on a Copain bun, Duke’s mayonnaise and house-made pickles. The business calls its first Freedom Drive restaurant the original shack.
The Hot Thigh switches to thigh meat and Beaut’s hot sauce, while the Cheesy Beaut adds baby Swiss to the breast sandwich. Bossy Bites are breast-meat nuggets coated in seasoned buttermilk and flour. Beyond fries and cabbage slaw, cucumber salad with yogurt, dill and mint provides a cooler side to accompany the fried chicken.
Ordering a sandwich alone is relatively inexpensive; adding a side and drink brings the meal into a moderate range. You can also order the chicken over a quinoa salad with spinach, strawberries and feta. Dessert comes from Copain Bakery, including a chocolate-chunk cookie and an apple-cinnamon hand pie.
