An August 2026 menu shows how far the food extends beyond a bar snack. Uni bucatini combines sea-urchin cream, truffle butter, lemon, and Parmesan; lamb Bolognese brings braised lamb with basil. The dry-aged fried pork chop pairs corn puree with peach barbecue sauce and corn salsa, putting dinner firmly into upscale price territory.
Smaller plates have their own elaborate preparations. Charred octopus joins sunchoke, Spanish chorizo, achiote, and guindilla peppers, while Wagyu carpaccio comes with elote, queso fresco, avocado crema, and piquillo peppers. A charcuterie or local-cheese selection offers another approach, with pickles, jam, mustard, olives, and lavash.
Stefan Huebner and Conrad Hunter built the concept around serious cocktails and spirits, and the current menu marks its establishment in 2017. A membership admits its holder and up to three guests, with valid identification and the dress code required for everyone. Reservations are especially encouraged on Friday and Saturday, and the kitchen closes before the lounge.
