Founder Manolo Betancur came to baking after a career as an engineer and officer in the Colombian Navy. His biography also traces his studies in modern languages in Tennessee and entrepreneurship at Stanford. Community work remains part of the bakery's identity, with its coffee supporting the We Care 4 initiative and assistance for Ukrainian bakers.
The signature tres leches cake uses two layers of vanilla or chocolate sponge and a mixture of four milks. Fillings include Cheerwine, churros, caramel and pistachio, giving celebration orders more variety than the familiar cake name suggests. The bakery asks for at least 24 hours' notice for custom cakes.
Pandebono has its own ordering timetable: the soft, cheesy bread requires two days' notice and is sold in packs of six, twelve or twenty-four. A six-piece pack is listed at an inexpensive per-piece price. Pair baked goods with the bakery's Colombian Arabica coffee, imported monthly from Bogotá and offered as a washed, medium roast.
